Ahhh....nice spicy yet cool salsa to enjoy with chips, on eggs, salads, tacos, or anything you enjoy salsa on. I'm no expert but I do love my recipe! It's fresh and very easy to make! Get your tomatoes now and have tasty salsa in just minutes.

I large bunch of cilantro
1/2 a red onion
10-12 roma tomatoes
2 tablespoons garlic
2 jalepeno chiles (seeds in - hot, seeds out - mild)
Lemon juice and salt to taste (I make mine without salt and it's very tasty!)
Mix everything in a blender and enjoy! Add some chopped avocado after blending and your taste buds will be in heaven! I'm getting hungry just thinking about it! Better go make some right now!

This recipe is flexible enough to add some fresh mango as well. Oh my goodness! I hear a food fiesta going on!

This is so refreshing and light. One of my all time favorite recipes for summer. Of course, you can use any tomato you like.
Tuna Stuffed Tomatoes
One beefsteak tomato per serviing
Large can of tuna or salmon (I like fresh salmon too)
1/2 cup mayonnaise
chopped cucumber (the best are Armenian or Persian cukes - they are the crispiest)
Head lettuce chopped up into small pieces (hint: use shredded lettuce then chop into smaller pieces)
Garlic and onion powder to taste.
Mix the fish, vegetables (except tomatoes), garlic and onion powders into a bowl.
Take the core out of the tomato and stuff with tuna or salmon mix. I have one son who is allergic to fish so I substitute chicken for him. One heck of a tasty meal right there! Enjoy!
